Ingredients to make Achari Chicken
For achari masala
• 2 tbsp coriander seeds
• 1 tbsp fennel seeds
• 2 tsp cumin
• 1 tsp mustard
• 1/4 tsp fenugreek seeds (methi)
• 1/2 tsp nigella (kalonji)
•. 2 dried Kashmiri red chilies
To marinate the chicken
• 500 grams chicken (with bones)
• 2 tsp Kashmiri red chili powder
• 1/4 tsp turmeric powder
• 1/2 tsp salt
• 1/2 tsp black pepper powder
• 3 tsp ground achari masala
• 1 tbsp ginger-garlic paste
• 2 tsp lemon juice
• 3 tbsp thick curd/yogurt
To fry Green Chilies
• 2 green chilies
• 1.5 tsp of achari masala
• 1/4 tsp salt
• 1/2 tsp oil
• 1/2 tsp lemon juice
For Achari chicken curry
• 2 Green Cardamoms, slightly crushed to open
• 3 cloves
• 1/2 inch cinnamon sticks
• 1/2 tsp fennel
• 1/2 tsp nigella/Kalounji
• 2 onions, finely chopped
• 2 tsp oil
• 1/2 tsp turmeric
• 1 tsp Kashmiri red chili powder
• 2 tomatoes, pureed in a mixer
• 1 tsp Kasuri Methi
• 3 tsp Achari Masala
How to make Achari Chicken (Step By Step Recipe)
• Roast the ingredients mentioned under achari masala on low heat until aromatic and crisp. Let the roasted ingredients cool down completely. Grind to a coarse powder. Keep it aside.
• Combine chicken with the ingredients mentioned under marinate the chicken. Keep it aside.
• Slit the green chilies from middle and remove the seeds to reduce the spiciness of chilies. Create a pocket for the stuffing. Combine 1.5 tsp of achari masala, salt, oil, and lemon juice. Stuffing should not be of flowing consistency; make a thick paste. Stuff the chilies with this achari masala stuffing.
• Heat 2 tsp of oil in a pan. Once the pan is hot, reduce the heat and add the stuffed green chili. Cook until golden spots appear. Remove and set aside on a plate.
• In the same pan add green cardamom, cloves, cinnamon, nigella, and fennel. Cook it for 30 seconds. Add onions, stir fry until golden.
• Add turmeric and red chili powder. Combine. Add marinated chicken. Roast the chicken until the oil starts to separate.
• Add tomatoes. Combine and cook it for 5 minutes.
• Cover and cook for 10 minutes on low heat. Stir in between as required. Add hot water to adjust the consistency of curry. Taste and add salt. Cover and cook on low until chicken is cooked. Oil floats on top.
• Add the stuffed chilies, kasuri methi, and 3 tsp of achari masala.
• Cover and cook on low for 2 minutes. Garnish with coriander leaves. Taste and add lemon juice or salt, if required. Achari chicken is ready to serve. Serve hot with naan, rot,i or rice.
