Ambani Wedding Mutton: Ingredients & Recipe Below:-
– Marinate 1 kg mutton with 1 tbsp each of salt, red chilli powder, half tbsp each of turmeric, fennel powder, amchur powder, 2 tbsp ginger-garlic paste and 200 grams curd. Let it sit for half an hour at least.
– Blend together 5-6 onions, handful of coriander stems, 2 strings of curry leaves, 15 garlic cloves, 2 inch ginger, 1 tsp each of black peppercorns, cumin seeds, 1 tbsp coriander seeds, 4-6 green chillies, 2.5 inch cinnamon, 4 cloves, 3 green & 2 black cardamom and 1 mace into a fine paste.
– Heat 6 tbsp mustard oil in a Kadhai and add in the paste prepared above. Fry on medium high for 7-8 minutes then add in the marinated mutton. Fry on high for 8 minutes then on medium for 12 minutes. Now add in 4 cups of hot water mixing well and close the lid turning flame to low for an hour or so checking and stirring in between.
– Place 2 walnuts on medium flame through a wire rack and let them char evenly from all sides. Immediately put the flaming walnuts in cold water and then grind them into a fine paste adding a bit of the same water. Strain this paste through a strainer and collect the charred ink. Add this ink in the mutton along with 3/4th tbsp garam masala powder mixing well and eventually garnish with chopped coriander leaves.
