Good advice.
I'm mystified by how easily they can perform the horizontal cuts. When I dice an onion, I can't get my knife to glide through it as easily as I see them do it and that's even after I've spent 10 minutes or running it through my sharpening wheels. The vertical cuts are easier but the horizontal ones not as much. Plus I'm a bit leery about where to hold the onion for the horizontal ones. Holding it on top, it slips. Holding the root, I don't want the knife to go too far and slice my hand. So I cheat and cut the onion into 1/4s. I cut vertically then rotate 90-degrees laying it on the other face and cut vertically again. Like she did with the garlic.
That is a great technique. I still dint kno why you make the horizontal cuts. The rings of the onyo are going to cause separation. 🤷♀️
