I'd say if they use wood smoke, they are real barbeque. I use an egg style charcoal grill because i grew up grilling and smoking with a weber barrel smoker from the 90s using charcoal and some added wood. It's time consuming and fiddly but i really like it because it's how I learned.
The one thing i found as a negative on a pellet grill is that because its blowing air through the unit all the time, it dries out your meat more. Either a well loaded offset or a kamado with a water bath has a moisture level that i think works better on brisket and pork butt specifically. Thoughts?
I've had my Yoder 640 since 2017. It has never failed me once and has 100s of cooks on it. Like you, I prefer the flavor from my offset but there is something about putting a brisket on the Yoder and getting a good nights sleep 😄
Thanks for posting the pellet series. I live in the Sierra Nevada and fire is a permanent danger, we therefore have strict and reasonable rules allowing only gas (propane or natural) or pellets. Offsets are not even an option.
I REALLY understand Bradley's pros & cons about pellet grills…..BUT, I have smoked some awsome full packard briskets, crispy pork bellies, pork butts, pretty much everything that shines on an off set smoker. So with that said, I kinda disagree with him on the cons of pellet grills. I can live with the hum of the fan!
I really like mine, I have a vertical and can cook a lot or a little and it always comes out great. I agree that it will never be as good as Texas BBQ but, I really like it. As far as is it "real" BBQ I don't know and don't really care, all I know is it cooks meat that tastes great and I eat it 🙂
My pellet grill just bit the dust only lasted 4 yrs. Good riddance, convenience was the only pro for it. It produced very little smoke.
Every grocery store in my area of Virginia has pellets on the shelf. I have tried 2 different pellet smokers. Trager, and now I have a Pit Boss series 7 vertical smoker. I have never had ANY luck with either. The only thing I use the series 7 for is a food warmer now. I have the Kettle Joe and had my best result recently. I am never going back to pellet smoking. I have watched Chud, Smokin Dad, Mad Scientist and a pleaothora of others and I never get the same result.
I gave away my disgusting 1500$ traeger pellet grill which was given to me for free as a gift 🤮 and I got a gravity fed masterbuilt charcoal smoker for 250$ and that is fucking fantastic and just as easy as that worthless pellet "grill"
Regarding cleaning the ash after every cook: I clean my grates and grease cleaner flat about every 3 cooks (by clean in this instance I mean tear apart and REALLY clean), I've had my RecTeq for about 2 years now and have just this past week cleaned out all the ash. There was hardly any at all. I have been using the RecTeq pellets and am now using Pit Boss pellets on my cook this weekend, so I'll see if that makes a difference in ash leaveage. (Is that a word? Now it is! lol!)
OK. I'm 1minute and 18 seconds into this video and… I had to SUB. You look and talk like you're in the backyard BS'ing with your buddies. I have a RecTeq and love it, I also have an offset that is about 40 years old (thick steel and still looks like it did after a year of use). So, I'm hoping I agree with what you have to say. But even if I don't… I'm gonna keep on watching your vids. Thanks for taking the time and effort (not to mention money) to make these vids. I'm sure I'll like the rest of them. Stay safe Brother!

Thanks for the video chud! I was on the fence for getting either an offset or pellet grill. I came across the masterbuilt gravity cooker. It combines the ease of use like a pellet, but cooking with charcoal and wood the only moving part is a fan. I went with the 1050 model with a modification package from LSS mods. Rock solid temps and close to offset quality smoke flavor. Also for pellets grills I’ve heard very good things about SMOKIN PECAN pellets, they are made from 100% pecan shells,supposed to put out twice the smoke as hardwood pellets.
Chud, you should ride up to Conroe and check out that LSG Pellet smoker that Chris and crew have put together. I think it's about the closest pellet smoker than can mimic our offsets.

As time goes on.. I use my pellet and my webber kettle, and only pull out the “big boys” for sport. It is true, it is only 80%_90% “as good”, but it is 1% of the hassle, even with vacuuming ash (yes, get a mini shop vac). I’m a convert, but still enjoy the old religion occasionally as time allows.

I have a woodwind pro. It has a smolder box in the front that lets you burn wood chunks and adds more smoke flavor.
That said, pellet grills burn wood pellets, which is wood. So, as long as the meat tastes great, and is safe to eat, who the hell cares? Never once have I heard anyone, or cared to tell anyone, they weren’t a real football fan because they didn’t suck that quarterback’s wang.
I've got a big $800 dollar vertical smoker and I love it. I know offset smoke is best but after discovering Smokin' Pecan pellets my cooks are amazing. People love my bbq. But I know it's not offset level but my friends don't know the difference
I just dont have time for a traditional smoker. Put the brisket on in the evening wake up wrap it and get back to work.
It's kind of like the manual vs auto transmission fight… Yeah, manual transmission is WAY more fun and gives more control. But, would you want to sit in traffic for an hour with your foot on the brake, or a foot on the clutch and a foot on the brake as you feather the clutch to keep the doofus in the Altima from cutting you off FOR NO REASON? If whatever you're doing meets 80% of the criteria from the labor intensive result, let it go my man. Good food is good food, regardless of how you get there. Stay safe, friends
Great video! It was an easy decision for me to go with a nice pellet smoker (Lone Star). I COULD spend thousands of hours learning how to become a master at offset cooking over my life (and in my case, I'm not getting paid or making a living doing all that) or I can get 85-90% of the way there by doing almost no work at all and spend my time doing things I DO get paid for. EASY choice! And even with offsets there's always a "next level". I could spend $5K on a backyard Franklin pit but someone will say, "well you know that BBQ will never be as good as if it was cooked on a 1000 gallon pit". At some point you just have to pinch it off and move on with your life.
@ChudsBbq thanks for making the great videos my wife loves the rolls you make and saves the recipes for the all to try. This series helped me make the decision to buy a Yoder even with the price being higher in the UK as my offset finally died last year and the convenience of a good pellet grill was a big draw.
What do you think of the DeWalt vacuum you bought to clean it up as I've been looking at them as I have other DeWalt tools with those batteries
12:00 💯, those are my takes on a good ol' fashioned fire vs pellet. Taste and flavor are much more desirable from wood chunks. I throughly enjoy the challenge of a manual fire cook and will take it 10 out of 10 times.
People that think it's not real BBQ unless it's grilled on the hood of a Ford F150 on a handmade fire pit are really annoying.
If you have a decent, reliable heat source, that's all that matters.

In the UK, pellets are expensive in my opinion compared to a bag of logs and are not reliably available in normal grocery stores, in fact some months of the year, you can only go to specialist pellet grill dealers for pellets.
