This is basically chicken menudo.
Not a criticism at all but you do not use a lot of tomato and less concentrated tomato sauce or paste that most use in asados.
The soy sauce flavor will be most prominent(1/3 cup) with enough vinegar for that adobo vibe.
The liver takes it to another level.
