America’s Test Kitchen is a real 2,500 square foot test kitchen located just outside of Boston that is home to more than three dozen full-time cooks and product testers. Our mission is simple: to develop the absolute best recipes for all of your favorite foods. To do this, we test each recipe 30, 40, sometimes as many as 70 times, until we arrive at the combination of ingredients, technique, temperature, cooking time, and equipment that yields the best, most-foolproof recipe.

Ya, good for you what about fixing the cheap ones i have
Steel will only warp due to temperature under two conditions:
1. It is not heated evenly – in this case, the hotter parts will expand more than the cooler parts.
2. There are internal stresses in the steel, often from cold-working the steel when forming the baking pan.
Bottom line, even a thick, "strong" baking pan will warp if it is cold worked to form the pan.
One of Dan Souza's earlier videos, and he hasn't hardly changed in over 8 years. Keep up the great work, Dan.
