Spaghetti all’ assassina/ Assassins Spaghetti

I’m using linguine here cause I didn’t have spaghetti available!
The name assassina, which means killer, refers not to the felony, but rather the risottatura cooking technique that cooks pasta like risotto. Instead of boiling the spaghetti, it’s cooked directly in the pan by adding water to it each time the pasta absorbs it. It’s sooo delicious and easy to make, you’ll love it!
Serves 1-
Tomato water-
3cups Water
Salt
5tbsp Tomato Paste or 1cup Tomato purée.
Cook this for about 5 mins and take it off heat.
2tbsp Olive oil
120g Pasta – spaghetti/ Linguine
7-8 cloves of Garlic; finely chopped – you can use more if you’re a ‘garlic girl’ like me!
1tbsp or less chilli flakes
Heat olive oil add garlic and chilli flakes, cook on high heat for 30 secs. Add 1/2 cup of the ready tomato water, along with the pasta, cook for 4-5 mins or till the pasta starts to slightly burn in the bottom. Now slowly keep adding the water till the pasta is cooked and the sauce is rich. Check if it needs more salt- mine didn’t. Serve this hot!😍
