Oh my goodness Albert, that looks sooooo good! I'm glad that you talked about the socarrat (what Puerto Ricans call pegao). It is such an important part of the flavor. I had some beautiful caramelization on the bottom but couldn't film it – my family was attacking the paella lol 🙂 I had a lot of fun doing this collaboration with you and I love your version of the paella – can't wait to try it out!
I made this seafood paella yesterday and it turned out superb according to my spouse.
But I think it would have been better if I put the shrimp and mussels much later, say 3 minutes before covering the pan.
Great attempt, but I've had better, much better..
Keep trying and you'll get there!

Hi. I was just watching Chef James Makinson review three (levels of) chefs make paella. Well, I’m not the only viewer who immediately thought of you. Chef lives in Spain (I believe he’s in Barcelona). He said he’d be interested in doing a collaboration with you. I think that would be so cool!
I read many comments from Spaniards that there is no such thing as Seafood Paella yet here on Youtube I can find foreigners in Seville, Valencia, and Barcelona eating Seafood versions. If it is not authentic then what is it?

This is my go to paella recipe now. Sometimes I'll switch a few things around, like using chicken thigh and chorizo or vegetarian meat (which obviously isn't traditional but good in its own right) I make a paella moreorless every week now! Asking for a big jar of sealed Saffron for Christmas. Kudos to you my friend!

Just wondering, do you have any ideas for whole grain alternatives to white rice? I was thinking possibly like unhusked barley. Like a slow(er) carb alternative to white rice that would be appropriate for this dish. THANK YOU!!!
