kudos on the tying it up like that. I use lower cook temps and an apple juice and stock mix added for moisture during cooking. if you live near a local cider mill, even better.

Oh Tatyana, this looks incredible! We love pork loin, too, and this will certainly add to the festivities of our holiday! There's such a richness of flavors gathered in the stuffing-perfect for pork. And mashing the garlic is such a great idea for the gravy! I think I'm going to roast the sweet potatoes and then mash them so we can put the gravy on top of them, too.
