Ingredients-
For yeast activation:
Lukewarm water- 1/2 cup
Sugar- 1 tsp
Dry active yeast- 1 tsp

For dough
Maida(All purpose flour) – 2 cups
Salt/Sugar
Oil
Butter

Step by step instructions-

1. Activate the Yeast:
In a bowl, add 1 tsp sugar to ½ cup lukewarm water and mix in 1 tsp dry active yeast. Let it sit for 10 minutes until it becomes frothy.
👉 Lukewarm means mildly warm to touch

❗️Too hot water can kill the yeast, and too cool won’t activate it properly — so stick to lukewarm!

2. Prepare the Dough Base:
In a mixing bowl, add 2 cups maida, ½ tsp salt (if making savoury dough), and then pour in the activated yeast mixture.

Gradually add the remaining water as needed and knead to form a soft, non-sticky dough.

3. First Resting:
Once kneaded, coat the dough with 1 tbsp oil, cover it and let it rest for 1 hour in a warm place until it doubles in size.

4. Final Kneading & Rest:
After 1 hour, punch the dough and knead again for 3–4 minutes with 1 tbsp butter to smoothen it.

Cover and let it rest again for 1.5 to 2 hours. The dough will become airy, light, and ready to use.
