How to make the most delicious Basil Pesto Pasta. It’s tasty, easy, cheap, healthy, fresh, fragrant and full of flavour. This recipe is definitely a must-try. Please enjoy!
Serves – 2
Ingredients –
2 Cloves – Garlic
15g – Parmesan Cheese, Freshly Grated
15g – Pinenuts, Untoasted * See note down below
45g (1 Bunch) – Basil Leaves
3 Tbs – Extra Virgin Olive Oil
1 1/2 Tbs – Sea Salt (1/2 Tbs for pesto, 1 Tbs for pasta water)
1/4 tsp – Ground Black Pepper
250g – Spaghetti or Pasta of your choice
Parmesan Cheese and Basil to serve.
Note* – I have used untoasted pinenuts. You can toast these if you prefer. It adds an extra nutty flavour to the pesto. To toast, place the pinenuts on a baking tray and place in a preheated oven set to 180.C or 350.F and toast for 3-4 minutes, until lightly golden. Add to the blender as per usual.

Hello chef, I didn't find any pine nuts but I bought sunflower seeds, what do you think chef, is it the same amount, should I use 15 grams too?
Definitely use less garlic. 1 clove will suffice. Mine was much too garlicy with 2. Garlic is such a high impact seasoning. Kind of disappointing overall. I’ll try it again sometime with just 1 clove and more basil leaves. I used a tad less basil than recommended so the taste of the oil and garlic really came through heavy. Added some heavy cream to lessen the spice but it drowned the basil flavor too some.
I have everything except the parmesan cheese so I'll skip that part.

Made with walnuts rather than pine nuts. Delicious, however needed more than 15g of walnuts for the flavour to come through. Next time will do 25g. Thank you for this quick and fresh recipe!

That wasn’t terrible before you add parmigiano at the end. Remember to use, before in the recipe, not only parmigiano but a mix 70% parmigiano 30% pecorino. And please don’t add black pepper

For years I've watched Italian cooks make pesto and pasta. I was intrigued. So I finally made this recipe.
I was disapointed. I don't like basil or pine nuts. So now I know. Lesson learned. Worth a chuckle!!!!!

This not very relevant but I want to bring awareness to something I have been going through which I think is important
I lost my sense of taste 9 days ago first I thought it’s COVID-19 but my results came back negative.
After a lot of investigation I found out that I have something called “Pine nut syndrome” which I didn’t know is a thing, but yeah I ate pine nuts in a pasta meal and apparently some species of pine nuts (specifically Chinese pine nut) cause this syndrome, it takes about a day after consuming the pine nuts for the symptoms to show.
Which are mainly loss of taste but you have a constant metallic taste in your mouth, like I can’t taste meat, chicken, bread, fish, sugar nothing whatever I eat I taste either nothing or the stronger version of the metallic taste which is constant in my mouth.
I think a main factor which help with diagnosing it is that your sense of smell stays fully functioning and you can smell the aromas of the food in your mouth but you can’t taste the food.
Its very miserable am hungry but I can’t eat and I read it takes 2-4weeks for this to go away.
This apparently a relatively new condition not alot of research is available my guess it has to do with unethical practices it’s known that very few pine nuts are edible but of course the inedible varieties are cheaper so there are unethical companies who package and sell them to unaware customers, please do your research and avoid these to save your self the agony and also so stores stop selling them.
I realise most people don’t know this, I went to three doctors who couldn’t diagnose it and when I figured it out and told them it was the first time they heard of this understandably so.
It’s definitely relatively a new thing but it’s becoming more and more common. I believe most people who get it can’t relate the cause to the pine nuts because it takes about a day for the symptoms to show and by the time there are many other suspects.
Anyway I hope this helps bring awareness about this and I encourage everyone to do their own research.
Ps pesto sauce which is prepared by these specific pine nut can cause the same thing.
