When the weather gets colder, Birria always comes to mind with the tender meat and warming spices! Today I made some crispy, smoky BBQ Birria Tostadas! With a delicious side of consome. This recipe is good for freezing and always having on hand, I definitely recommend giving this one a try as it’s a pretty hands off process. I can’t recommend it enough!

Recipe:
1 Gallon Beef Stock

  1. Birria is constantly on my "I need to make this" list. In the summer, it's too hot to be outside that much, but then I wait until winter and it's 25 degrees and I don't want to be outside either. Gonna do this in 2026 for sure though. My absolute favorite every time I have it. Never had bad birria.

  3. I do Birria like once a week for my household. Did you actually taste any smokey flavor from smoking the meats first? I tried smoking the meat vs searing and I could honestly not tell a difference at all. In theory it sounded like a win but it literally zero impact. Not sure why. For the record, I didn't do it on an offset but rather pellet grill with mesquite chunks which usually does a great job on the camp chef.
