When the weather gets colder, Birria always comes to mind with the tender meat and warming spices! Today I made some crispy, smoky BBQ Birria Tostadas! With a delicious side of consome. This recipe is good for freezing and always having on hand, I definitely recommend giving this one a try as it’s a pretty hands off process. I can’t recommend it enough!
Recipe:
1 Gallon Beef Stock

Birria is constantly on my "I need to make this" list. In the summer, it's too hot to be outside that much, but then I wait until winter and it's 25 degrees and I don't want to be outside either. Gonna do this in 2026 for sure though. My absolute favorite every time I have it. Never had bad birria.

Chud Tip: You can use Chud's Chorizo seasoning in a pinch to season your meat for birria or carnitas.

I do Birria like once a week for my household. Did you actually taste any smokey flavor from smoking the meats first? I tried smoking the meat vs searing and I could honestly not tell a difference at all. In theory it sounded like a win but it literally zero impact. Not sure why. For the record, I didn't do it on an offset but rather pellet grill with mesquite chunks which usually does a great job on the camp chef.

You have to make it with goat one of these days. Beef birria is good but goat is amazing. Cannot recommend it enough. Most latin and asian markets carry goat meat

This is a beautiful birria. Although if you want heat add Bird's Eye chillies, Arbol is for flavor it barely has any bite.
