BBQ Chicken & A Burn Barrel In The Mountains

Easy BBQ Chicken Recipe
โ€“ Steep the chicken in buttermilk and your favorite rub (1/4 cup of rub) for 12 hours.
โ€“ After 12 hours, pat the chicken. Try to not dry it out completely as you need it to be tacky.
โ€“ Apply salt, pepper, and your favorite BBQ rub.
โ€“ Set your smoker to 275 and smoke the chicken until it hits an internal of 145-150 degrees.
โ€“ You will need a 50-50 mix of olive oil and melted butter, to baste the chicken with a rosemary sprig. โ€“ โ€“ Base and apply your rub again.
โ€“ Repeat every 15 minutes until you reach an internal temp of about 155 -160.
โ€“ Pull your chicken, let it rest for 8 minutes, slice and enjoy.

Burn Barrel
The first step is to burn off the toxins: run a fire until all or most of the paint has burnt off. Add more and more wood until the paint starts to evaporate. Keep your distance โ€“ the chemicals are nasty!

WAIT (unlike I did!) until the drum has cooled down and the embers are completely out, empty the barrel. Drill 1 hole in the center of the barrel at the opposite sides. By every center hole, 5โ€ from every side you will create another hole, totaling 3 holes on each side. You want to place the first set of holes 3โ€ from the bottom ring, 3โ€ from those holes in mirror opposites you need to create 3 more sets of holes. The hole size is based on the rebar you can find. Most likely 3/8โ€ of 1/2โ€ rebar. The idea is to create a straining shelf for the coal to fall through to the bottom of the barrel.

Finally cut an opening in the bottom of the barrel, around 8โ€ tall and 14โ€ wide, make sure your shovel fits easily.
