➖ Recipe ➖
Ingredients –
Chicken, Seasoning & Sauce –
2 tsp (10ml) – Olive Oil (Divided)
1.2kg (2.6lb) – Chicken Breast, Diced
1 tsp (4g) – Onion Powder
1 tsp (4g) – Garlic Powder
1 tsp (4g) – Smoked Paprika
1/2 tsp (1g) – Chilli Flakes (Optional)
1 tsp (2g) – Dried Oregano
1 tsp (2g) – Dried Thyme
125ml (1/2 Cup) – BBQ Sauce (Reduced Sugar)
Salt & Pepper
Macaroni & Cheese –
400g (14oz) – Macaroni Pasta
400ml (14oz) – Low Fat Cream or Milk
100g (3.5oz) – Cream Cheese
1 tsp (4g) – Onion Powder
1 tsp (4g) – Garlic Powder
1 tsp (4g) – Smoked Paprika
140g (4.9oz) – Grated Cheese (Gouda, Cheddar, Gruyere)
Salt & Pepper
Method –
1. Bring a pot of salted water to a boil. Cook the macaroni for 1 minute less than the packet instructions. Drain and reserve some pasta water.
2. In a bowl, add the chicken, seasoning, and 1 tsp (5ml) olive oil, except the BBQ sauce. Mix to combine. Place a pan over medium-high heat. Add the chicken and cook for 4 minutes. Add the BBQ sauce and mix to combine. Cook for 30 seconds. Remove from the pan.
3. In the same pan, back over medium-high heat, add the low-fat milk or cream, cream cheese, onion, and garlic powder. Mix to combine and bring to a simmer. Reduce heat to medium, add the grated cheese, and mix until thick. Add the drained macaroni and mix until combined. Check seasoning. Remove from heat.
4. Serve in 5x 750ml meal prep continuers with the BBQ chicken on one side and the macaroni cheese on the other. Garnish with flat-leaf parsley and cracked black pepper. Dig in.
5. This recipe will last 3-4 days in the fridge and can be frozen for up to 3 months. Thaw in the refrigerator overnight before reheating. Reheat in the microwave or a pan over medium heat. If heating in a pan, add a splash of water or stock to rehydrate.

The Caribbean in me is screaming after hearing you say 3-4 days in the fridge or 3 months in the freezer. A lot of us tend to cook enough to keep in the fridge for 5-6 days 😅. As for freezing, sometimes stuff that's been in there for 6+ months get heated up and served. Never had food poisoning or anything, probs because we're built different 🤣
