I don’t eat leftovers all the time, but when I do, its always creatively delicious. This version of a bbq pulled chicken sandwich using leftover roasted chicken legs is one of my favorites to whip up ANY TIME OF YEAR. My family tends to eat chicken at least once a week and seem to always find a good use for the leftovers the day after. Sometimes casserole, sometimes an insanely juicy bbq chicken sandwich. 1/2 cup preferred bbq sauce
1/2 onion (thick sliced)
sharp cheddar cheese (sliced)

Mop sauce:
1 cup apple cider vinegar
3 tbsp molasses
1 tsp smoked paprika
2 tsp celery salt
2 tsp onion powder
2 tsp dijon mustard
2 tbsp Worcestershire sauce
