BBQ as we know it started on slave plantations by enslaved people who were only given the scraps of the animals to live on. In doing so they had to find ways to make them edible by slow cooking over fire to break up the toughness of the off cuts. There is little to no documentation for obvious reason. BBQ later became the food of the poor for the same reason only I'm modern-ish America has it become what it is were its on every street corner throughout most of the country.
I am from Decatur AL and I grew up on Big Bob Gibson White sauce. He change the recipe. Chris Lilly the owner at Bob Gibson shows people on You Tube how to make it. There is white sugar in the original recipe.
Definitely prefer letting the sauce marry with the chicken under a veil of smoke.
.. no sugar in it huh?.. maybe he meant by white or brown sugar granulates?.. not sure if he knows apple juice has sugar.. i butterfly my chicken via the breast bone.. that backbone has so much flavor.. haha.. "in the middle here is what I like to call is a keel bone".. not just you buddy.. thats its name..

Just made the Alabama White Sauce for my chicken. The sauce is over the top I believe it's going to lend itself well to other foods. I think I'll use it as a dipping sauce.
Great video! However, I would never suggest using a wood cutting board with raw meat especially chicken. But that’s just me. End results look amazing!
