Would love to see this again with a bigger cut or whole lamb…just dont forget the feta next time lol. Also to make gyro meat at home is easy and doesn't have to be on a rotisserie, it would be cool to see your take on that as well.

Recipe with quantities for the pita?? How much flour? How much yeast? How much oil? You mention 1 cup of warm water and nothing else. Some salt?

Would you consider cooking a venison hindquarter the same way as the lamb? Just curious how it would turn out since there's not any fat content and if the foil boat method would be beneficial.

What are the dimensions of your butcher block ? Did you make it or buy it?
This is lamb meat in a pie with some kind of yogurt sauce, definitely this is not Greek Gyros in pitta and this is not tzatziki, man…!!! Gyros named after the way the meat is grilled (goes in a pot and turns round and round – gyro gyro). Original Greek pita gyros is PORK meat, fried potatoes, tomato, onion, tzatziki. Tzatziki made with Greek yogurt, smashed garlic, cucumber, olive oil. Nothing else.
