Loaded bbq beef baked potato.
I picked up the chuck roast at my local @marianosmarket , seasoned the outside with @fegesbbq Beef Rub and it hit the @biggreenegg at 250 degrees indirect for about 2.5 hours. Then it goes into a dutch oven with 1 onion, some pickled jalapeños and about 2 cups beef broth. Place it back on the grill and cook until fork tender, about 2-3 hours more.
When the chuck is ready, shred it and it’s time to assemble the potatoes. Baked potato, cheese, beef, more cheese, bbq sauce, sour cream, pickled red onions and green onions.
