I usually do a 321 or some variant but i did 4 racks today and felt lazy so rather than go exactly by time i did the toothpick method and left em unwrapped the whole cook.
They feel pretty tender but since i have to wait for my sister to cook the sides im taking this time to sauce em and let em roll a while longer
