Recipe ⬇️
Ingredients:
• 4 cups arugula
•1/4 cup feta cheese OR shaved Parmesan
•1/4 cup toasted pecan, pine nuts or walnuts
• 1/2 avocado, sliced (I did a full one)
Dressing:
• 2 tbsp extra virgin olive oil
• 1 tbsp lemon juice (fresh)
• 1 tsp Dijon mustard
• Salt and black pepper to taste
Instructions:
1. In a large bowl, add arugula and avocado
2. In a small bowl or jar, whisk together the dressing ingredients.
3. Drizzle dressing over the salad and toss gently (or wait for step 4)
4. add your toasted nut and cheese – mix well!
NOTE – you can toast the nuts yourself OR buy them like that
– I put the pecans on a pan and toasted them before adding
– you can also add a candied pecan or walnut!
