BBQ Turbot in a Wood Oven



This is one of the best things you could do with a Turbot,

The highlight of any bbq for me. This dish only really works with a wood oven but will give a result using a super hot 240c oven at home.

Makes enough for 4
1x 1.3kg turbot wild
20 cherry tomatoes ripe
Olive oil white wine
Red onion Finley sliced
Oregano

To set the turbot up, simply place the turbot on a snug fitting oven proof tray.
Place the onions and tomatoes around. Add the wine and olive oil.

Season will and add the oregano.

The cooking in a hot wood oven or normal oven will take around 10-12 minutes.
Once out. Remove the fish allow to cool.

Place the tray back on a low heat and use a whisk to combine all of the juices and tomatoes.
This will make a mind blowing sauce.

Pass through a sieve – or not.. it’s your bbq!
Eat and enjoy a moment of utter life affirmation

  1. Hi Adam, Loved the video and admire your skill, Im just a retired plumber but passionate home cook (for 30 yrs now) and sleep,dream,cook,eat and film food , did I mention I love food? I enjoyed being nosey looking around your home kitchen & Garden setup (very similar to mine) I still have my TM31 thermo as well! also in my shack. A weber Komado and Wood oven I got 20 yrs ago in Spain ( you were in an elite club back then if you owned a wood oven) now Im retired I have even more time to dedicate to food.. But I have to tell you a little Story about my Turbot Purchase ..before I start I swear Im an honest guy but this is what happened… In one of the Large Supermarkets ( about 4 yrs ago) I noticed a large Turbot for Sale,which really was above what we could afford as we had a full trolley already at this point! however I said to my wife I just gotta get it, you only live once… Anyhow we paid and were driving home and I said to my wife ..well how much was the shopping ? She said I think about £140, I said thats sounds cheap with the Turbot check the receipt.. They'd been a slip up at the till and it wasn't in there..To this day I feel guilty and especially as when we called in two weeks later the guy on the fish counter must have remembered my face and said..Did you enjoy that Turbot Sir! I felt like saying …if only you know-how good it tasted!. Happy days and carry on with the great video's I learn so much from them. Thanks.

    I can imagine that Turbot tasting phenomenal!
    No Turbot here in Australia but we do have good bbq weather so swings and roundabouts. 😀
    Incidentally, what do you cook for people who come round your house that you don’t like? 😅
    Don’t believe you would ever serve something that wasn’t great!
