Hi Susie, noticed when you broke down the chicken that there was blood by the thigh? I tend to get that when I do turkeys and have to throw the thighs back in for a few more minutes. Do you have any advice? I spatchcock my turkeys also

Cherry pellets for sure and I also had some Cherry Powder, Turbinado Sugar, Salt, Paprika, Sugar, Garlic, Dried Chiles and Spices for a rub, YUM!!!

Hey Girly, in place of kitchen shears,,,,, > (it's sometimes painful to your hand) go buy and use exclusively for this, is a pair of garden shears! Works way better for me, even on T-key's! I learned this "AFTER" I've paid some $15 on some top of the line QUALITY kitchen shears!
I get a big pile of Kingsford white hot on my 18” Jumbo Joe Kettle then spread my coals out even & go bone down for 1 hour after seasoning it with Tony’s Cajun seasoning then flip the skin side down for about 10 minutes then it’s ready. Try that Susie please.
