  1. Susie, you gave me the hands on direction, and courage, to spatchcock a chicken. The cherry chipotle sauce was awesome, and my family and friends were very happy with our meal. Thanks for making such accessible and fun videos.

  2. Hi Susie, noticed when you broke down the chicken that there was blood by the thigh? I tend to get that when I do turkeys and have to throw the thighs back in for a few more minutes. Do you have any advice? I spatchcock my turkeys also

  3. I failed with a spatchcock turkey. (Issues with my smoker.) But, I'm ready to go back and give it another try with a chicken. I will brine, as suggested. I'm pretty pumped to give this a "Go"!

  4. Hey Girly, in place of kitchen shears,,,,, > (it's sometimes painful to your hand) go buy and use exclusively for this, is a pair of garden shears! Works way better for me, even on T-key's! I learned this "AFTER" I've paid some $15 on some top of the line QUALITY kitchen shears!

  5. I get a big pile of Kingsford white hot on my 18” Jumbo Joe Kettle then spread my coals out even & go bone down for 1 hour after seasoning it with Tony’s Cajun seasoning then flip the skin side down for about 10 minutes then it’s ready. Try that Susie please.
