This simple dish can really pack a punch of flavour. Itโ€™s a classic recipe that never disappoints and feels so familiar after a long time. Weโ€™re emphasizing cook times for the vegetables, cause texture matters!

Ingredients:
– 1/2 lb sliced beef
– 1 head broccoli (florets)
– 8 stalks of asparagus (cut into 1.5โ€-2โ€ pieces)
– 1/2 bunch adult spinach
– 1.5 cloves garlic (minced)
– 1โ€ ginger (sliced)
– 1 tbsp tamari
– 1.5 tbsp oyster sauce
– 1 tbsp neutral oil (avocado)
– 1/2 bunch green onions (sliced, seperate greens and whites)
– 1/2 tbsp sesame seeds

methods:

Prep vegetables:
1) Heat neutral oil in a large skillet over medium-high heat
2) marinade beef with starch, tamari (or soy sauce) and oyster sauce
3) Add minced garlic and ginger, sautรฉ for 1 minute until fragrant
4) Add sliced beef and cook until browned, about 1-2 minutes. Remove and seat aside. Note: it depends on what beef you use. If you have thin beef like me remove it earlier so it wonโ€™t over cook, if you have a thicker cut, like sliced steak, cook a bit longer. We will re-add to the pan at the end to reheat and cook through.

VEGETABLES:

5a) add aromatics: ginger goes first, cause this doesnt burn as easily as garlic. My pan had some fond, so I added a bit of water, and scraped the brown bits (add more oil if needed).
5b) add garlic and scallion whites, total ~30 seconds.
6) Next, broccoli florets. These need about 4-5 minutes, so weโ€™ll add these first about 2 minutes, before adding next ingredient.
7) Then, add the asparagus. These ones are thin so they take about 2-3 minutes to cook. Cook for 1 minute, and then add more soy sauce on the sides of the pan.
8) add spinach – these doesnโ€™t take long to cook about 1-2 minutes total. Adult spinach has more structure so it holds up better than baby spinach. Cook for about 30 seconds before adding the next ingredient.
9) Add beef back into the pan, mix everything will. Can add a bit more oyster sauce at the end for more flavour,
10) Garnish with sliced green onions and sesame seeds
