  1. Every time I ask a butcher for beef belly bacon, or even just beef belly, they look at me like I have another arm growing out of my forehead.

    Even my sister, when she was getting a steer butchered by some high-falutin' big shot university instructor, asked him to cut out the beef belly so she could make bacon encountered the same ignorance as to what that was.

  2. Would'nt the bottom be very soggy? I usually put a layer of breadcrumbs under the filling to soak up the grease and moisture so the bottom of the pie is also nice and flaky.
    (And I believe putting some chili-beans in the mixture would also not hurt)
