  1. A few years back, I made beef cheek lumpia,
    these take it to a whole new level. 💯 I seasoned the beef cheeks with @fireandsmokesociety Super Special Prime, a top-tier brisket and steak rub, and they turned out insane. Beef cheeks are already rich, so I threw in some Cotija cheese for that creamy bite, then topped it off with a fire jalapeño chimichurri.
    No doubt, one of my favorite game-day snacks this year! 🔥

    𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨:
    •Beef cheeks
    • @fireandsmokesociety Super Special Prime Steak and Brisket Rub
    • Cotija cheese
    • Egg roll wrappers

    𝙅𝙖𝙡𝙖𝙥𝙚𝙣𝙤 𝘾𝙝𝙞𝙢𝙞𝙘𝙝𝙪𝙧𝙧𝙞:
    • 1c chopped cilantro
    • 1c chopped parsley
    • 1 small shallot minced
    • 1 whole garlic minced
    • 2 jalapeños diced
    • 1 whole lime juices
    • 1 tbsp @fireandsmokesociety Super Special Prime Steak and Brisket Rub
    • 1/4c red wine vinegar
    • olive oil add to your preferred consistency

    𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨:
    • Olive oil as a binder then season generously
    • Smoke at 225F w/ oak wood until an internal temp of 180F
    • Wrap in aluminum foil with beef broth then back onto smoker until an internal temp of 205F
    • Shred then add to egg roll wrappers w/ Cotija cheese. Roll up then shallow fry at 300F until golden brown on both sides
    • Serve w/ jalapeño Chimichurri and enjoy! 💰
