Ingredients (Serves 4–6)
• Beef shin (boneless, diced) – 1 kg / 2.2 lb
• Salt – 1 tsp (5 g )
• Black pepper – ½ tsp (2.5 g )
• Plain flour – 2 tbsp (30 g / 2 UK tbsp / 2 US tbsp)
• Vegetable oil – 2 tbsp (30 ml)
• Onion, diced – 2 medium (300 g)
• Carrots, diced – 2 medium (200 g)
• Garlic, minced – 3 cloves (12 g / 3 tsp)
• Tomato paste – 2 tbsp (30 g )
• Beef stock – 500 ml (500 g)
• Worcestershire sauce – 2 tbsp (30 ml)
• Bay leaves – 2
• Fresh thyme – 1 tsp (1 g) ½ tsp dried
• Potatoes, peeled & diced – 500 g
• Frozen peas – 100 g (⅔ cup) Optional
• Ready-made shortcrust pastry – 400 g (about 1 standard pack)
• 1 egg, beaten (for glazing)
Pressure cook: (High) for 30 minutes. Allow natural release for 15 minutes.
Preheat oven to 200°C / 180°C fan / 400°F / Gas 6.
Bake: Bake for 30–35 minutes until golden brown. Rest 10 minutes before serving.

Shin is the best cut for casseroles. Always comes out soft and succulent with good flavour. However here in the UK meat is proving to be expensive, and that applies across the board. The amount of shin you demonstrated with would cost an arm and leg here. Have never known meat to be so expensive . ❤

Lovely pie Rik,shin is easy to get here,but cut as Osso Bucco. That meat looked really good.,I found if you fold the pastry into four it can be easier to place in a deep dish. I know you know what to do,but for other people you unfold it in the dish.😊

For those hesitating on buying n Instant Pot because of the expense, (lets face it they are expensive), look in the thrift stores. I bout mine, the next size down from Ric's, for $15 U.S. They were running about $90 to $109 in Walmart at the time. A wonderful time saver for roasts and stews if nothing else.
