Here is a slow cooker beef stew that is easy and perfect for an easy dinner. I like to serve over crusty slices of French bread for a comforting meal.

INGREDIENTS
3 lbs beef chuck roast
1 1/2 lb potatoes
3 medium carrots
2 celery sticks
3 cloves garlic
1 envelope of beefy onion soup mix
2 tsp Worcestershire sauce
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
5 Tbsp all-purpose flour
1 dried bay leaf
8 oz frozen peas
* I did not add liquid to the Crockpot

  1. I made this except forgot to add flour to beef in the beginning so added it as a slurry with about 1/4 c water at the end (about 3 hours into cook time) and added a small can of tomato sauce. These additions made more sauce but it was more acidic and needed more salt so I added the second packet of beefy onion soup and my family thought it was bomb in their words. I really enjoyed the flavor profile even without browning the meat in this recipe, which I usually do with my stews typically. The vegetables seemed to be just right too, even though I added twice as much of both carrots and potatoes than the recipe called for and added them in from the beginning of cook time. I did transfer to stovetop after the first 3 hours on high in the slow cooker, cooking an additional hour or so to speed up cooking time, but everything was finished just right from the meat to the carrots and potatoes.

  2. Thank you. I loved this receipe.. I have made it for the very fussy grandkids and they gobbled it right up. Today, I am cooking a pot for my elderly neighbours. This is going to be regular for my kitchen. A very simple stew that is rich in flavour and so easy to make.
