2 pounds beef tenderloin
4 ounces butter
4 green onions, sliced
3 tablespoons all-purpose flour
1 cup beef broth
1 tablespoon prepared mustard
8 oz of mushrooms, sliced
1 cup sour cream
1/2 cup white winesalt and ground black pepper to taste
Slice beef into strips. Melt butter in pan and brown beef at high heat then remove.
In the same pan, sauté onions then add mushrooms and sauté until fully coated and slightly softened. Add white wine and deglaze the pan. Add beef broth and bring to a simmer, stir in flour until fully incorporated. Add beef back in and simmer for 30-40 minutes until tender. Stir in sour cream and mustard to finish, once stirred in completely simmer another 10 minutes then serve over buttered egg noodles.
