►16 oz baby Bella mushrooms, thickly sliced

►1/2 Tbsp fresh thyme leaves, minced (or 1/2 tsp dried thyme)
►1/2 tsp salt, or to taste
►1/2 tsp black pepper, freshly ground
►1/2 cup dry red wine (Pinot Noir, Merlot, Cabernet, Sauvignon)
►1 cup beef broth
►1/2 cup heavy whipping cream

  1. I made this tonight. It was a pretty good dish. It looked like you reverse seared the tenderloin or smoked it. Which is a big deal. The only complaint I have is it has way to much cream. I think it takes too much away from the wine reduction. Also I used a sweet white and mixed in some asparagus heads. it was yum. Great recipe!

  2. Great recipe! The mushroom sauce is definitely going into regular dinner rotation here at our house. I love that you don't need to sear the tenderloin before putting it in the oven. I made this twice and both times I had to cook it longer than the 28-30 minute recommended time to get to medium. I used a meat probe so it was no issue. Highly recommend anyone looking to cook expensive cuts of meat like this invest in a meat thermometer or probe. Thanks so much!

  6. A few notes:

    1. My tenderloin cooked in less than 20 minutes. My fire alarms went off when I checked on it after 18 minutes of cooking time! It got very smoky! So I had to take it out and turn off my oven before it burned.

    2. My mushroom sauce looks more like a stew. How did she get it to thicken up here?

    3. KEEP A CLOSE EYE ON THE TENDERLOIN WHEN IT’S COOKING. BE CAREFUL NOT TO BURN IT.
