#beggarschicken is a Chinese dish that uses #clay to encase and cook a whole chicken, after which it is cracked open with a mallet. I take things a step further by collecting my own dirt which I process into clay. 😅

I'd def add more layers of lotus leaves. And take the lotus wrapped chicken out of the clay and newspapers before opening it up.
There's so much bacteria in the sink, you just put them in there. shudders
Few days ago I spent over 2-weeks with 3 Americans who has run from cold weather of Minnesota. They were like "we put sugar in every thing we cook, you put salt in every thing you cook". At the end, they were like "salt is more healthier and tastier than sugar"😀
This is a convenient thing to do with freshly slaughtered chicken because you don't need to pluck the feathers this way they will peel off with the clay

This is an excellent way to cook fresh caught fish when you go camping and forget your cast iron skillet.
My dad taught me how to do this 50 years ago. The trick is to make certain the leaves completely cover what you are cooking!
You could also use drywall plaster, which comes in pails premixed.

Emma. Could you start a marinades and sauce company? I'd buy this sauce from you, but I couldn't afford to buy all of the components individually.
Clay can have A LOT of lead in it. I would not recommend that people go out and prepare their own clay without testing it first. Newspaper ink is lead-based as well. If one is making it, I would add more layers of lotus leaves to protect the chicken better against the lead. Or use something other than newspaper.

Growing up I was always told never to play with my food. Meanwhile Emmy's over here having a blast covering her food with leaves, parchment, and mud.
