Besan Ki Roti
Recipe in English:

Ingredients:

-Gram Flour 2 cups
-Wheat flour 1 cup
-Fresh coriander 3 tbs (finely chopped)
-Mint 2tbs (chopped) finely chopped
-Onion 1 medium (crushed)
-Oil 3 tbs
-Green chilies 2 (chopped)
-Coriander seeds crushed 1tbs
-Red chili crushed 1tbs
-Salt 1 tbs or to taste
-Cumin seeds 1 tbs
-Ginger garlic paste 1 tbs
-Water ½ cup or as required
-Ghee for frying

Directions:

-In bowl, add chickpea flour, wheat flour, fresh coriander, mint, onion, oil, green chili, coriander seeds (crushed), red chili crushed, salt, cumin seeds, ginger garlic paste and mix well.
-Add water, mix and knead well. The consistency should be soft. It helps if you kneed it with a wet hand.
-Cover and rest dough for 15minutes.
-Now make medium balls of the dough.
-Flatten the ball, sprinkle some wheat flour to the dough ball.
-Roll the balls with the help of rolling pin into a flat round circle.
-Heat ghee on tawa, put the beasni roti on tawa.
-First cook one side, apply ghee, turn and cook the other side.
-Serve besani roti with chatni.

Recipe in Urdu:

Ajza:

-Besan 2cups
-Atta 1cup
-Hara dhania 3 tbs (chopped)
-Podina 2 tbs (chopped)
-Pyaz 1 medium (crushed)
-Oil 3tbs
-Hari mirch 2 (chopped)
-Dhania crushed 1tbs
-Kuti lal mirch 1tbs
-Namak 1tbs or hasb e zaroorat
-Zeera 1tbs
-Adrak lehsan paste 1tbs
-Pani ½ cup or as required
-Ghee for frying

Directions:

-Bowl mein besan, atta, hara dhania, podina, pyaz, oil, hari mirch, dhania (crushed),kuti lal mirch, namak, zeera, adrak lehsan paste dal ker mix ker lein.
-Pani shamil karein aur ache tarhan ghoond lein. Haath gheela ker k ghontay jayein.
-Dhak ker 15 minutes kliya rakh dein.
-Ab dough k medium size k balls bana lein.
-Ball ko haath ki madad sa phela lein aur thora atta chirak lein.
-Ab rolling pin ki madad sa roti bail lein.
-Tawa per ghee garam karen aur roti dal dein.
-Ek side ko halka sa fry karein, ghee laga ker roti ko plat dein.
-Chatni k saath serve karein.

Lehsun ki Chutney (Garlic Chutney)
Recipe in English:

Ingredients:
-Garlic cloves 1cup
-Button red chilies 12-15 or to taste
-Cumin seeds 1 & ½ tbs
-Salt 1 & ½ tsp or to taste
-Oil 1 tbs
-Water ½ cup or as required

Directions:
-In grinder, add garlic cloves, whole red chilies, cumin seeds, salt, oil and water, grind until medium coarse paste.
-Chutney is ready.

Tip: If you don’t like raw garlic taste. Blend all ingredients together except oil. Heat oil in a saucepan and add grinded ingredients, mix well until done.

Recipe in Urdu:

Ajza:
-Lehsan 1cup
-Sabut lal mirch 12-15 or to taste
-Zeera 1- ½ tbs
-Namak 1- ½ tsp ya hasb e zaroorat
-Oil 1tbs
-Pani ½ cup or hasb e zaroorat

Directions:
-Grinder mein lehsan,sabut lal mirch,zeera,namak,oil aur pani dal ker ache tarhan grind ker k paste bana lein.
-Chutney tayyar hai.

Tip: Agar kacha lehsan na pasand ho tou, oil ke elawa sab cheezen grind karlen. Phir saucepan mein oil garam karke us mein grinded ingredients shamil karke paka lain.
