This is one my favorite beef stew recipes, its heart warming and comforting. A perfect dish to make during cold winter days or just any day of the week for you or your family. Give it a try and am sure you will enjoy it. It serves a crowd and stores very well to enjoy during the week withany side dish of your choice or just as it is.
INGREDIENTS NEEDED
2.6lbs ( 1.2Kg ) Beef meat cut into 1 inch cubes
2 Tbs vegetable oil
Salt and pepper
1 Yellow onion, diced
1 Carrot. peeled and diced
2 Green long peppers or 1 Green bell pepper, diced
1 Tbs Tomato paste
1 Tsp Cumin powder
1 Tsp Coriander powder
1 Tsp Paprika
1/2 Tsp Chili powder
3 Tbs All purpose flour
1 Tbs Worcestershire sauce
2 Bay leafs
2 Ripe Tomatoes, diced
2 c Beef stock or water, add more as needed
3 Sprigs thyme and 1 Rosemary
3 Potatoes, peeled and cut into 1 inch cubes
1/2 c Frozen peas
1/4 Cilantro chopped to finish and garnish
