Best Chicken Vindaloo (Fiery, Tangy, and Ready in 30 Minutes!)
Craving a curry that’s bold, tangy, and seriously spicy? 🔥 This Chicken Vindaloo delivers big flavor fast, made with a vinegar-garlic marinade, warm spices, and your choice of chilies. It’s a quick, easy weeknight curry that tastes like it came from your favorite Indian restaurant (but fierier).

What makes vindaloo special?
Vindaloo is known for its signature spicy + tangy combo, thanks to a vinegar-based marinade and bold spices (with heat from chilies).
Key ingredients (highlights)
Chicken thighs (or breast)
Vinegar + garlic (the must-haves!)
Spices: paprika, ginger, coriander, turmeric, mustard powder, cumin, cinnamon (fire it up with ghost pepper flakes!)
Serrano peppers (or go milder / hotter to your taste – ghost peppers anyone?)
Heat level (make it yours!)
This one can be very hot. I sometimes use ghost pepper flakes for that extra kick. Want it milder? Use milder peppers and lighter chili flakes. Want it hotter? Step up to hotter chilies (hello, habanero/ghost).
Quick method overview
Marinate the chicken (minimum 1 hour – overnight is even better)
Sauté onion + peppers
Add chicken + marinade, then tomato paste
Add a splash of water/broth and simmer until thick and saucy
Serving ideas
Serve over rice with fresh herbs and extra chili flakes. If it’s too spicy, pair it with a cooling yogurt side (raita-style).

Keeps up to 5 days in the fridge
Freezes well for up to 3 months

Another really good recipe, Mike. I like the way you give alternatives for hotter or less hot dishes. Not everyone likes it super hot (my better half for one), me i'm a bit of a spicy lover. So everyone can be happy.

Man I've been making your classic Vindaloo recipe for a while now, but was adding some extra "authentic" Indian spices and now you've got a new recipe with them in it. Guys, try this if you like spicy super flavorful chicken curry dishes, this is so good!
