Secrets to delicious slow roasted Chinese BBQ Duck. 烧鸭 The secret to crispy roast duck with moist, tender meat is to slow roast the duck.
This is my version of Chinese BBQ Duck Street Style. The recipe was developed from my travels to China. The outside rub consists of Chinese ingredients for flavour and fragrance. I added a secret western ingredient to make this duck recipe super delicious. The cavity of the duck is stuffed with ingredients familiar to Southern style Chinese BBQ, such as ginger, green onions and star anaise. My Chinese BBQ duck recipe combines the flavours of Northern China and Southern China. You will impress your family and friends. Recipe is below:

CHINESE BBQ DUCK STREET STYLE 中式街头烤鸭
1 whole 4 lb. young duck
4 pieces ginger
2 stalks green onion
6 star anise
1 to 4 teaspoon Chinese 5 spice powder
1 1/2 tablespoon salt
1 tablespoon cumin
1 tablespoon thyme
3 tablespoons cooking oil (peanut oil)
Wash duck in cold water, including the cavity. Dry the duck inside and out. Hang the duck to dry for minimum of 2 hours. Sprinkle the salt on the surface of the duck and in the cavity. Put duck on in a pan lined with paper napkins to absorb the moisture. .Put duck into the fridge for for at least 6 to 8 hours. Better to put duck in fridge for 1 to 2 days.
Let duck warm at room temperature for at least 1 hour. Put ginger, green onion stalks and star anise into the cavity of the chicken. In a bowl, put the Chinese 5 spice, cumin and thyme in a bowl. Crush all ingredients into a powder. Rub the ingredients over the entire surface of the duck. Be sure to sprinkle some of the ingredients into the cavity. Optional: add cooking oil to the ingredients before rubbing on the duck and putting in the cavity.
Preheat oven at 320 degrees f (160 degrees c). Put duck into oven and cook for 2 to 3 hours. Let duck cool for at least 15 minutes before cutting.
