  1. Not sure this should be called a casserole in my house, but it sure seems like it would make a nice goulash or stew. Where I live a casserole is a dish in which food may be baked and served which is a baking dish or vessel. Casseroles are almost always baked in an oven. A goulash is a stew made with meat (such as beef), assorted vegetables, and paprika stirred together over a heat source.

  2. Turmeric is a healthy ingredient you can add turmeric if you like the only thing is that your eggplant casserole will have a yellowish color. As for the curry it is totally up to your liking the only thing is that your eggplant casserole will loose its traditional taste. Both the turmeric and the curry will not substitute somac. If you don't have somac you can use lemon instead. Enjoy!

  3. The one thing you must do is to stay with the onion while frying. Although it takes few minutes to get soft but then once it starts browning it burns fast. I cook the onion on high and when they reach the color or softness I desire, I reduce the heat and add the other ingredients called for in the recipe, like vegetable, tomato sauce or water, this will stop the onion from burning then I continue according to the instruction of the recipe.
