The best lentil soup I ever had was several years back at all you can eat Soup Plantation or Sweet Tomatoes Buffet(different name same owners)- both in California and Las Vegas Nevada before they closed permanently due to COVID. It was called continental lentil(tomato based) and it was chock full of lentils and out of this world delicious! They only had it about 3 years until closure. I miss it greatly! Ironically the worst one I had about 30 years ago was from the same buffet. It was called herbal lentil and barely lasted a few months. It burned the throat, watery, and had low level lentils! Awful! They got rid of that quickly!
The other great lentil soup I had was about 2 decades ago or so at a middle eastern restaurant in Point Loma San Diego California which offered an all you can eat meal during certain hours! It was supreme! I only went there unfortunately one time.
What the… ? Since when is salt added to legumes before cooking? That extends their cooking time! No wonder they boil them for 30 mins! Soaked a little they can be done in half the time!
For "pro" cook, I'm surprised to see you make an horizontal cut on onion… Unnecessary step and can be dangerous.

In Australia we grow Puy lentils. But we can't call them Puy, but instead they are solld as French-style green lentils. I haven't cooked a brown lentil since discovering these beautiful green lentils.

Puy lentils are a little boring, Good brown lentils are better for me.
Little Basmati rice to accompany and a spoon of clarified butter also called Ghee will raise it to another level.

You guys should try more lentil dishes from the Indian subcontinent, there are sooo many varieties and variations!
Only after you have been to South Asia and tasted the hundreds of lentil dishes you can say that you have tasted enough to conclude which is the best lentil dish.
These are a must try. I would rather have a small amount of something great than a whole lot of ho-hum. And willing to spend the money. Thank you for the recipe and video.

I haven’t found du puy lentils—not with AOC certification. Stores sell “French lentils,” which have the same speckles as du puy. Are they a suitable substitute?
