I smoked 2 chuck roast on my Yoder YS640 pellet smoker using 2 different rubs, one from PS Seasoning and the other from Cattleman’s Grill. I used Victory Lane Garlic Jalapeno as a base on both chuck roast and the flavors were really tasty.

You should have check the temperature BEFORE wrapping as those two were not really ready to be wrapped up at all.
Doing them for over 33 years, have several people say how they thought north Carolina had the best BBQ until they tried Texas, Oklahoma, and Louisiana BBQ, and I told them the difference is we don't use vinegar on our meat, that's considered masingale flavor 😅

How long can you put salt on the a big roast before you prep it for smoking. So far it has been in the fridge for 2 days. I plan to use my PCB to smoke it.
FYI.. the Cattlemen's Grill seasoning is a Whopping $16 for a 10.5oz container. Combine Sea Salt, Garlic Powder, Ground Red Pepper, Onion and Red Bell Pepper.. and make your own for 1/10th the cost.
