This just might be the best way to cook salmon on the grill.

I seasoned the fish with my AP rub and it went on the grill over some sliced oranges and limes. While that was on, I prepped the lemon chimichurri sauce.

Mix the following:
– Handful of parsley
– ¼ diced red onion
– 1 tbsp minced garlic
– Zest from 1 lemon
– Juice from 1 lemon
– 1 tbsp fresh oregano
– 1 tsp crushed red pepper
– 1 tbsp red wine vinegar
– ¼ cup olive oil
– Salt to taste

Brush this on the salmon during the last few minutes of the cook and pull it off the grill when it hits 135 internal.

This was so flavorful! Very fragrant, citrusy, tangy, super fresh!
