  1. Note to self. When you have 25 mph winds blowing, try to build some sort of break or position your pit boss out of the wind against a wall or something. Literally took mine and extra 1-2 hours just because of the cold weather and the wind mostly.

    I was thinking, though, if you dropped that poster down a foot or more, so your head just meets the red ash, and then zoom in the camera a tad, it might make for tighter intro/outro segments. Anyway, just a thought. Keep on keeping on 😊

  3. Besides dry brining (which Darrin also suggested years back), the only difference I’ve made to this method is to buy a short handled set of branch loppers (Amazon) to cut the backbone out. Last year we mistakenly bought a larger turkey than Darrin recommends and the bones had developed to a point that it was a nightmare to cut through the ribs. Since then cutting out the backbone is a two minute process. Overall, Darrin’s method is a sure fire winner!
