We took two racks of St Louis Spare Ribs, prepared and cooked them both exactly the same way. One on a Big Green Egg XL, and the other on a Yoder YS1500s Pellet Smoker. No surprise – they came out different.
For this cook, we used The BBQ Rub made by Malcolm Reed from HowToBBQRight and Mississipi Grind from Swine Life BBQ. There are links below so you can buy both. We made dry rub ribs this time – no sauce, no honey, no brown sugar – just the meat, the rubs, and the smoke. As you’ll see in the video, they still turned out moist, tender, and yummy!

I have to wonder how a medium Big Green Egg can do ribs like this compared to the XL (Darth). The main difference between it and Darth is the smaller size. I actually like the savory type flavors better, too. Perhaps I'll have to try this when I get the right equipment. Thanks!

I'm surprised it's a tie, I have a yoder ys640s & kamado joe. The pellet grill has 0 taste other then your seasoning, I have even cooked the yoder in a closed 23×32 garage for 6 hours, no smoke smell, they burn too clean I want that grill char flavor, I have tried all of bbq delight pellets they all taste the same, like I cooked in a oven or boiled the meat in a gallon size bag 0 taste or flavor, is this a yoder thing or a pellet thing? Oh and now my paint is cracking on the yoder, I hope they take care of me!!!!

Neither of these can out do my family's triple axle smoking rig, and yes the guys who built the green eggs built our trailer. We just got done doing a huge fundraiser for ohio hospice, it was a 3 day cook , did 300 racks of ribs, 100 pork butts, 250lbs of nc style coleslaw , and about 30 large cans of baked beans, fed over 1500 people
We just had our deck built. My wife is so against having a huge ugly (her words) grill taking-up space on out new deck. She said the Kamado (orange/red) would look nice and doesn’t seem to take a lot of space. I just hate charcoal.. Never been a fan. Just want to set the temp and not have to bother. But I think I can manage.

so does the BGE give more smoke flavor than the pellet grill and I wonder about putting a damper on a pellet grill exhaust to keep more smoke inside for more flavor. Thinking about buying a pellet grill but worried about loosing smoke flavor
I've been contemplating on purchasing a Yoder smoker, would love the 1500s, that thing is a beast for sure but the 640s might be more my speed. Either one would look great on my patio! This video was absolutely adorable!!!
Great video – I’m trying to decide between a KJ or a Traeger. It seems you’d recommend the KJ?
Both looked good. I am not a big fan of 'fall of the bone' ribs. There comes a point where 'fall off the bones' equates to mushy; which is not good eats. Anyone can make 'fall off the bone' ribs. Just wrap them and let the steam do the work. My preference is to have the ribs juicy and bite off the bone. It's about the texture and flavor.
I've had a big green egg for many many years and my buddy has been trying to get me to switch to a Traeger or Rectec. The ease of just turning it on and walking a way is a bit tempting but it's really hard to screw up in the BGE with a temp regulator and a bit of time. Either way I just checked the weather for this weekend and I'm buying some ribs. I love that you included your daughter in this as well – she's adorable and knows her ribs!

Found you bc I have a YS640 and Kamado Joe, and am doing similar experiments. Your video was great in that aspect. However my motivation for commenting is that as a father of a 12 yo daughter myself, I have to compliment you on the daddy/daughter aspect. She has a great dad!
