Blended Coconut Overnight oats AKA dessert for breakfast

I’m officially obsessed with this creamy coconut oats and chocolate combo—so simple, yet so good!

Ingredients (for 2 servings):
100 g rolled oats (1 cup)
180 g coconut milk (¾ cup)
180g almond milk or other milk of choice (¾ cup)
20g shredded desiccated coconut (¼ cup)
5-6 Medjool dates

For the top cocoa layer:
10 g cacao (1 tbsp + 1 tsp)
30 ml water (2 tbsp)
1/2 tsp maple syrup (or other sweetener)

Instructions:
1. In a blender, combine the rolled oats, coconut milk, almond milk, pitted Medjool dates, and shredded coconut. Blend until smooth and creamy.
2. Transfer the mixture to a bowl or jar, cover, and refrigerate for at least 4 hours or overnight.
3. In a small bowl, mix the cacao powder, water, and maple syrup until smooth.
4. Top with the cocoa layer, and enjoy.

  1. It turns out that the chocolate syrup topping is indeed not optional. I halved the recipe and the serving is very large. If you make it without adjusting, prepare to be eating this for the rest of the week’s breakfast or sharing it or something. It’s missing some sweetness without the chocolate topping. I rate it a 5/10. But it could be my fault cuz I added protein powder.

  2. I hate oats and I would eat this every day. Thank you!! I added a few whole walnuts and almonds to this to add some omega-3 and antioxidants and adjusted down the desiccated coconut to maintain consistency
