Bolognese Sauce
Ingredients
* 3 Tbs extra virgin olive oil
* 6 oz Pancetta (cubed or sliced)
* 2 oz Onion (Diced)
* 2 oz Carrot (Diced)
* 2 oz Celery (Diced)
* 1 lb Ground Beef
* 4 oz White or Red Wine
* 1 Tbs Tomato Paste
* 8 oz Tomato Puree
* 8 oz Vegetable Broth
* 4 oz Whole Milk
* Salt and Pepper (To taste)
Directions
1. On medium high heat, add olive oil and pancetta in a heavy non-stick 10 inch enameled cast iron pan and cook until fat is melted.
2. Reduce heat to low and add the onions, carrots, and celery. Continually stir with a wooden spoon several minutes until soft, but not browned.
3. Add ground beef until fully browned.
4. Increase the heat to medium-high, pour in wine to deglaze the pan and cook until wine is completely evaporated.
5. Add tomato paste, puree and vegetable stock. Mix well together.
6. Reduce heat low, cover with the lid, and allow to simmer for at least 2 hours, adding the milk halfway through the cooking time.
7. Once fully reduced to a thick meat sauce, add salt and pepper to taste.
8. Serve with your choice of pasta… enjoy!!
