Braised pork adobo with mashed potato

Ingredients:
Pork belly
1/4 cup soy sauce
1/4 cup vinegar
1 tbsp white sugar
1 cup water
Garlic
Bay leaves
Salt
Pepper

Mashed potato:
3pcs large potato
1/2 cup butter
1/4 cup milk
Salt
Pepper

Cornstarch with water for the sauce

Procedure:
– Cut pork belly into large squares and tie it to hold its form once tender
– Melt the sugar in a pot till caramelized and sear the pork till it is brown and covered with caramelized sugar
– add water first then soy sauce, vinegar, bay leaves, garlic, salt and pepper
– Cook in medium heat for 1hr
– Once soft and tender, remove all the solids in the sauce and thicken it by adding slurry
– for mashed potato, cut the potatoes into 4
– boil till soft and put it back in the pan and mash it
– while in low heat, add a lot of butter and mix continuously till it is creamy
– add milk and mix till you got the right consistency
– add salt and pepper to taste
– serve and enjoy!
