1 box of Jiffy Buttermilk Biscuit mix if using small box, if you’re using the bigger boxes of Bisquick, Jiffy or any other biscuit mix, use 2 cups and follow the recipe for banana bread on the Jiffy box. You can use any mix! I used this brand today!
3/4 cup sugar
1/4 cup butter or margarine ( use a whole stick to make it more moist)
1 egg instead of 2
You can use any fruit you’d like instead of peaches or bananas
This recipe can be used to make banana
bread, peach bread, or any fruit you’d like! If making banana, use 1 cup, of peach, use 1 cup, you can add a little more of each
1 cup ripe banana, mashed ( I used 3 ripe bananas, the browner the better) if making banana bread
Muffin cups or 9″ x 5″ loaf pan ( if you’re using a loaf pan, grease the pan) You do not need to grease muffin pan, I used a bundt pan for today, any pan you use if fine.
Makes 12 medium muffins. If you want to stretch it to make more, or smaller muffins, use less batter, and more cups!
Instructions:
Preheat oven to 350 degrees
Add all ingredients to bowl, or mixer, and mix
Pour into your pan(s)
Bake for 50 mins or until brown
Check on your muffins around 30 mins to see their progress
When they are almost finished cooking, stick a toothpick or other cooking instrument into the muffins to check to see if they’re done. If your tool comes out clean and no batter is on it, then they’re done.
Remove from oven, let them cool ( or if you want to eat them warm you can too) and enjoy!
