While waiting for the new fridge to arrive, I thought about how fridges have only become a part of our lives very recently. Yet we have become so dependent on it.

When I was in 2nd grade, living in Thailand, I went to my teacher’s house and discovered that she did not own a fridge (teachers are not paid well in Thailand). I was surprised, but it didn’t seem to bother her because that was her normal. She bought/cooked what she needed in the short term, and nothing more.

So in a strange way I’m glad the fridge died, or I wouldn’t have come up with this recipe.

It also forced me to eat/cook as much as I can from our small backup freezer because it was about to burst with all the things we transferred to it from the broken fridge. This was also a great thing because you wouldn’t believe how many things I found in the back of the freezer I had completely forgotten about!
