Ur not suppose to put the seasoning in the bowl. Its suppose to go in the noodle water for flavour. Putting the seasoning in the bowl is probably why u couldnt handle the spice.
When halfway cooked, I like to move the noodle to a new pan, add milk and let it simmer for a while with low heat. After a while, I add all the seasonings in and mix it all up. For me it gives great creaminess and tones down the spiciness a whole lot, so I can enjoy the taste with no worries

When I cook bulduk, somtimes I use chicken broth!

If you add an egg to the seasoning and some leftover water, it'll like create a broth I think lol
