I'm seeing more and more cooks buying large cuts and then cutting their own steaks. Great idea these days. I live just about a stone's throw from the northern part of the 6666 Ranch, a huge Tyson's plant, and close to Amarillo with about the world's largest collection of feedlots, and beef prices are still sky high. Just bought a new freezer as well.
OMG Joe, I wish I had seen this video when I got a whole strip from Costco a few months ago. I broke the thing down miserably. I really didn't know what I was doing. I now know more so thank you.

3:06 Donβt do this next cut. If you notice, he cuts a piece off to flatten the end but if you skip this cut and begin your cuts as he does on the other end, you will save one unnecessary cut and the uneven end piece will just develop as you make your cuts. This will also save more meat for the grill as the uneven end piece will be just what is necessary. I bet he loses about 3% of usable meat all while taking extra time and energy on he extra cut.

Joe, you season your steaks prior to vacuum seal & freezing? I always wondered about applying any seasoning to any meats before you vacuum seal and freeze. I guess it doesn't affect the meat? Thanks for the video.
