1 1/2 Tbsp (30ml) – Olive Oil
800g (1.7lbs) – Chicken Thigh, Boneless & Skinless
1 1/2 tsp (3.5g) – Onion Powder
1 1/2 tsp (3.5g) – Garlic Power
1 1/2 tsp (2.5g) – Dried Oregano
1 1/2 tsp (2.5g) – Dried Thyme
1/2 tsp (1g) – Red Chilli Powder
2 Tbsp (10g) – Smoked Paprika
1 – Brown (Yellow) Onion, Diced
5 – Garlic Cloves, Minced
750ml (750g) – Chicken Stock
1 1/2 Cans (600g) – Diced or Crushed Tomatoes
200ml (220g) – Thickened Cream
600g (1.3lbs) – Penne
Seasoning To Taste

Great little recipe 🔥, I found that i didn’t put enough stock in a smaller pot making the pasta not softer than I’d like ( I used fusilli ).
Cooking the pasta in a separate pot recommended 😁
the difference with buying a premade rose vs making it with the tomatoes and cream is insane
For me it's too much pasta. Also, if you don't have a wide enough pot it won't reduce in 15 minutes. If you try to increase the heat you'll burn the cream so keep that in mind.

what type of pan/pot is he using? is there a name for it? looking on Amazon but i don't see anything with that sort of shape. i just made this in my 8 quart stock pot but i've been looking for something a bit more wide, like what he's using.

Cooked this one up for my work lunches for the week. Definetly filling and keeps me going.
Interested though in tweaking recipe to add bit more veg to the mix to make it healthier; thinking capsicum, carrot and spinach might work – swap out 300gm worth of chicken for about 400-500gm veg. Any recommendations/suggestions on what could work?

One thing to consider. 800g chicken, why not 1kg. 1,5 cans of tomato, why not 2 cans? Make it easier. Besides all perfect. Sub and like.
Really like this as a dish in the off-season. Not good for cutting but as a nice bulking dish it is ideal.
I personally use lower fat cream and lentil pasta just to lower fat and add a bit more protein. But it's good either way
As European, how to replace thickened cream? With whipped cream? Or just normal cream with gelatin? Or?

By far a life saver, as a truck driver I've become very lazy when it comes to food. Everyday consists of subways or dry food like sandwiches and it gets so boring, I'm going to give this a go and see how it goes. Even paid for a portable food heater for in the cabin
