  1. I'm a professionally trained chef and I will tell you that you did an exceptionally good job. You will find some fickle chefs that demand that you brown off a tomato paste but that's wrong for every recipe. It works for some but not this one. The way that you Incorporated the tomato paste will maintain the Tangy and fresh flavor of it that will be a great compliment to the other flavors that may be more strong. Like your spices and herbs that you toasted which is a very very good way to do it. I'm guessing that you work as a chef somewhere. And I also don't care for Al Dente pasta. You know there's a guy in Oklahoma named Al that drove his truck through a hail storm and they renamed him al dente. Get it?
