Calzone from We Bare Bears πŸ»πŸ»β€β„οΈ

DOUGH:
3 cups all purpose flour
1/2 tbsp salt
1 tbsp white sugar
1 1/4 tsp instant dry yeast
1/4 cup olive oil
1 1/2 cup water

RED SAUCE:
1 onion, chopped
2 bell peppers, sliced
2 tsp chili flakes / chili powder
1 tbsp sugar
salt & pepper to taste
Tomato sauce

BECHAMEL SAUCE:
2 tbsp unsalted butter
2 tbsp all purpose flour
1 1/4 cup milk
salt and pepper to taste

TOPPINGS:
Mozzarella cheese
Any meat you like

Instructions:

1. Mix bread flour, salt, white sugar, instant dry yeast, olive oil and water.
2. Knead for 10 minutes or use electric mixer and knead for 5 minutes.
3. Rest for 1 hour.
4. Divide pizza dough into equal portions and roll into a circle.
5. On one half of the dough, spread all of your selected ingredients.
6. Fold over and tightly crimp the edges.
7. Cut air vents, brush with oil and sprinkle on parmesan.
8. Bake at 475F for about 15 minutes or until golden brown.

For Red Sauce:
1. Saute chopped onions, sliced bell peppers.
2. Add tomato sauce, white sugar, chili flakes, salt and pepper. Cook for 5 minutes.
3. Set aside

For Bechamel Sauce:

Step 1

Warm the milk on low heat until little bubbles form at the edges; remove from heat.

Step 2

Melt 2 Tbsp. unsalted butter in a heavy-bottomed saucepan over medium heat. Stir in 2 Tbsp. all-purpose flour and cook, stirring constantly, until the paste cooks and bubbles a bit, but don’t let it brown, about 2 minutes. Slowly add 1ΒΌ cups whole milk, heated, whisking to incorporate. Bring it to a boil, stirring constantly, as sauce thickens. Add kosher salt and freshly ground black pepper to taste. Reduce to low heat, and cook, stirring, 2–3 minutes more. Remove from the heat.
